Short profile:

We work in collaboration with local fruit growers to ensure good supplies of local fruit and we make preserves for Arlington Court, the local National Trust property.

Detailed description:

We have a strong environmental ethos reusing, recycling and composting. We have planted fruit trees and bushes to cut down food miles, although it will be some years before full productivity. We do not use pesticides or herbicides and share fruit with the birds. In 2007 we had 26 different species of butterflies, numerous dragonflies and a plague of toads.

Last year (2008) the bad weather devastated the butterflies but was loved by the dragonflies, hope against hope we may see marsh fritillaries again this year.

Imported frozen fruit for jam is cheaper than buying local due to labour costs, the environmental cost however is high. Wherever possible we source locally, not only is the flavour of cooking from fresh better, but you don't need added pectin or setting agents.
