Short profile:

Biltong arose from wagon-travelling Voortrekkers whose only way to preserve meat was to dry it. This provided a sustainable source of food as the Cape Dutch migrated during the Great Trek from the Cape Colony (Cape Town) into the interior of South Africa (Pretoria). The word Biltong's roots go back to these 18th century Dutch pioneers as they crossed South Africa. It derived from two Dutch words, Bil Buttock and Tong Strips, biltong was simply narrow strips of meat, dried in the sun, as a means of preserving meat.

Detailed description:

While our Biltong is no longer dried in the open air, the same traditional recipes are used today, and the general process, flavours and end product are much the same as the biltong you would have found the voortrekkers eating centuries ago. Biltong can be made from beef, game, chicken or ostrich, but for now, Bullox supplies only the highest quality beef biltong. Although similar to American jerky, Biltong is acclaimed as a finer form of jerked meat, perhaps due to the care taken in the cut of the meat, or perhaps due to the air drying process, which provides a more succulent end result than kiln dried jerky.
